1. Remove the internal organs, scales and gills of soft-shelled turtle, clean them, and marinate them in cooking wine for a while to remove the fishy smell.
2. Cooking wine controls dried fish. Heat the pan and cool the oil. Add snapper and fry until golden on both sides. Take out the pan and set it aside.
3. Brush the pan clean, pour in proper amount of oil, add onion, ginger and garlic and stir-fry until fragrant, add tomato sauce, sweet and sour sauce, soy sauce and salt, add turtle after boiling with proper amount of water, cook over high fire until the sauce is thick, take out of the pan and add a little coriander.
