ingredients: spareribs, salt, soy sauce, pepper, star anise, starch, onion, ginger slices, monosodium glutamate and coriander
step 1: clean the fresh spareribs, chop them into 3cm long pieces and put them in a pot.
step 2: release the chopped spareribs with soy sauce, thirteen spices and corn starch, and fully stir them by hand for later use.
step 3: put a proper amount of oil in the pan, and the oil temperature is 6% hot. Put the mixed spareribs into the oil pan in turn, stir them evenly with chopsticks (or spoons), fry them until golden brown with medium heat, and then take them out.
step 4: put the fried ribs into a pressure cooker, and pour a proper amount of boiling water, preferably one inch higher than the ribs. Add salt, pepper, star anise, ginger slices, onion segments and appropriate amount of soy sauce, cover the lid tightly, boil SAIC motor with high fire, simmer for 15 minutes, and turn off the fire. How to stew the ribs is delicious. Here are some methods I summarized.
1. The ribs must be soaked with bleeding water, and the bleeding water must be put into the pot with cold water, otherwise the meat will not be rotten. After the water boils, remove the floating foam and take it out for later use.
2. After changing a pot of water to boil, pour the ribs in and cook them (note: the ribs must be put in after the water boils), and then add ginger or cooking wine. You can also add a few drops of white vinegar (calcium ribs stewed with vinegar are easy to stew in soup), and don't add salt and other condiments at first
3. Bring to a boil for 5-1 minutes on high fire, and simmer for one hour on low fire
4. Add seasonings such as salt, monosodium glutamate and chopped green onion after the ribs are stewed
