Preparation materials: 500g lotus root, 150g glutinous rice, 60g brown sugar, 60g rock sugar, appropriate amount of dried osmanthus
1. Prepare the materials and soak the glutinous rice for 2 hours.
2. Wash and peel the lotus root, and cut off about 3 cm of one end to make a lid. Drain the soaked glutinous rice and use chopsticks to help fill each hole in the lotus root.
3. After filling, fix the cut end of the lid with a toothpick.
4. Put the glutinous rice lotus root into the pressure cooker, add water to cover the lotus root segments, add brown sugar, put on high pressure for 30 minutes, turn off the heat, and simmer for another hour.
5. Transfer the lotus root and soup to an ordinary stainless steel soup pot, add rock sugar, and cook over medium heat until the soup thickens.
6. Cool slightly, slice into slices, pour over the soup, sprinkle some sweet-scented osmanthus and serve hot.
