1. Potato barbecue
Pour some oil into the wok, slide it and add a tablespoon of sugar. 2. Braised mutton
Prepare 500 grams of mutton, cut it into small pieces, and soak it in clear water for 10 minute, so as to remove blood from mutton and reduce fishy smell. Prepare half a red pepper and half a green pepper and slice them for later use. Prepare half an onion and slice it. Dice ginger slices, onion slices and garlic together, then add 3 pieces of star anise, a handful of dried peppers, 2 pieces of angelica dahurica, a tsaoko and a handful of green peppers for later use. Boil the water in the pot again, add cold water, add 5g cooking wine to remove the fishy smell, slowly boil out the blood and impurities in the mutton, blanch the water for about 2 minutes after boiling, and remove the floating foam in the pot. After the mutton turns white, take it out and rinse it with clear water, and control the water for later use.
3. Fried towel gourd with shrimp
Peel the towel gourd, wash it, cut it into hob pieces, wash the shrimp, add cooking wine, soy sauce and a little starch, grab it evenly with your hands and marinate it for eight minutes. Put the right amount of oil in the pot, and the oil temperature is 70% hot. Stir-fry the marinated shrimp for two minutes until the shrimp meat is broken. Add an appropriate amount of oil to the pot, add minced garlic to 70% heat, saute dried peppers, put loofah in the pot and stir-fry for five minutes, and stir-fry until it is broken.
