First, a thousand pages of tofu in a griddle
Ingredients: 1,000 pages of tofu, 250g pork belly, 250g green pepper, half a carrot and a garlic sprout.
Accessories: 2 tablespoons soy sauce, 2 tablespoons sugar, 1 teaspoon salt, 1 teaspoon chicken essence, a little oil, a proper amount sesame oil, a proper amount of dried red pepper, 2 onions, ginger and garlic, and a proper amount of Pixian Chili sauce.
Production process:
1. Pork belly in cold water, add ginger slices and scallions and cook for four or five minutes to seven or eight minutes. This way, the meat is tough and delicious
2. Cut a thousand pages of tofu into 5mm thin slices, cut green peppers into diamonds, slice carrots, shred onions, onion, ginger and garlic, and cut dried red peppers for later use.
3. The pork belly is cooked in seven or eight minutes as shown in the picture, and the inside is still pink. Cool and cut into thin slices.
4. Heat an empty pot, add pork belly slices and stir-fry for oil. Set aside for use
5. If there is not much lard stir-fried, add a little oil, warm the oil in the hot pot, add onion, ginger and garlic to the wok, and then add dried red pepper to stir-fry until fragrant.
6. Put a tablespoon of Pixian Chili sauce in the pot (chopped a little beforehand) and stir-fry the red oil, as shown in the figure.
7. Return the pork belly slices to the pot and stir-fry evenly over high fire.

9. Cook the cooking wine, light soy sauce and stir well.
10. Continue to add green pepper and garlic and stir fry for a while.
1 1. Add salt, sugar and a little chicken essence. Finally, drizzle sesame oil, and add a little red oil if you like spicy mouth.
12. Then find a dry pot. My family didn't use a stone pot instead. Brush the bottom of the pan with some oil and spread with shredded onion.
13. Pour everything in the pot into the dry pot. When you want to eat, just heat the griddle.

Second, braised thousand pages of tofu
Ingredients: thousand pages of tofu, a box of pork belly, a piece of shallots, a little soy sauce and two spoonfuls of salt.
Accessories: delicious sauce, a little abalone juice or oyster sauce, a spoonful of chicken essence, a little starch, a spoonful of pepper.
Production process:
1 .1,000-page box of tofu, one pork belly and a few shallots.
2. Slice a thousand pages of tofu, slice pork belly and mince shallots.
3. Pour an appropriate amount of oil into the pot, and when the oil temperature is 80% hot, add pork belly slices and chop them until they are broken.
4. Pour a teaspoon of soy sauce and stir-fry the meat slices to make them color.
5. Add a thousand pages of tofu and stir fry, add two spoonfuls of salt, one spoonful of abalone juice or oyster sauce, and a small amount of delicious juice, then pour in half a pot of water, cover the lid and simmer for 15 minutes.
6. When the water is almost dry, add a small amount of chicken essence, pepper, and a spoonful of water starch, stir well, and then take off the pot. Sprinkle with chopped green onion when serving.
