How to fry yellow preserved fish ?
Remove the scales and gills from the fresh fish, wash and dry the fish with kitchen paper.
Preheat a pan and add a little olive oil, then add the dried fish and fry on low heat without covering the pan.
Fry the fish on one side of the pan, then flip it over and fry the other side of the pan, so that the pan is hot and the fish don't stick to the bottom of the pan.
Fry the fish as much as possible until golden brown. The fish should be cooked from head to tail without overcooking.
