Chicken, red dates and wolfberry stews are delicious and nutritious.

It is best to buy black-bone chickens that are slaughtered on the same day. After you take them home, wash them first and remove the skin from the chicken necks and buttocks. Check again and clean up the remaining chicken feathers. Finally chop into chunks and set aside.
Cooking method:
Add enough water to the casserole, turn on high heat and start boiling the water. The tangerine peel and ginger can be put into the casserole first. In addition, add water to the pot and put the cut chicken into the pot for blanching.
Also add 1 tablespoon of cooking wine, 1 green onion knot and a few pieces of ginger to remove the fishy smell. Bring the water to a boil over high heat and cook for 3 minutes. After the water boils, foam will appear. Beat the foam away so that it will not stick to the chicken. After blanching the chicken, pour out the water and remove the onion knots. Then rinse the chicken with hot water.
Then pour the chicken into the casserole. At this time, the water in the casserole is boiling. Put the red dates and Codonopsis pilosula into the soup pot in the casserole, then cover it and bring the water to a boil over a slow fire. Simmer for 1 and a half hours.
After 1 and a half hours of stewing, the black-bone chicken has become very soft. Then pour the wolfberry into the casserole, add an appropriate amount of salt to taste, and a little white pepper to remove the fishy smell and increase the aroma. Cover and simmer for another 3 minutes, and you're done.
