How to stew frozen spareribs
1. Soak the spareribs
Prepare some fresh spareribs. The frozen spareribs must be thawed before stewing, otherwise the taste will be very bad.
Pork ribs contain a lot of blood. If you stew them directly, the blood will melt into the soup, causing the pork ribs soup to turn black in color and have a strong fishy smell. Therefore, after buying the ribs, rinse them with clean water, chop them into small pieces, put them into clean water, add a spoonful of salt, stir evenly, soak them for 2 hours, change the water every half an hour, and soak them until the water becomes clear and the meat turns white. .
2. Blanch the ribs
After the ribs are taken out and rinsed, they still cannot be stewed directly. There is still some blood left in the meat, and there will be a fishy smell if stewed directly after soaking. Put the ribs into the pot under cold water, add onion, ginger and cooking wine, blanch over high heat for 5 minutes, skim off the foam, remove and rinse.
3. Stir-fried pork ribs
If you want the pork ribs soup to be fresh and delicious, you need to do one more step after blanching, which is to stir-fry. Heat the oil in the pan, add the pork ribs, stir-fry over low heat until golden brown, and stir out excess fat. This will make the pork ribs more fragrant and not greasy.
4. Stewed pork ribs
After frying the pork ribs to remove the fat, add an appropriate amount of boiling water, transfer to a casserole, add green onions and ginger slices, bring to a boil over high heat and simmer for 40 minutes. . Add appropriate amount of salt and chicken essence, stir evenly, simmer for another 5 minutes, turn off the heat, and the braised pork ribs are ready.
You can use an iron pot for braised pork ribs, but try to use a casserole for braised pork ribs. The casserole has a good heat preservation effect, allowing the ingredients to be cooked quickly and fully releasing nutrients. Of course, a pressure cooker can also be used. When stewing pork ribs, you must heat or boil the water, do not add cold water, otherwise the meat will become woody and the soup will not be thick and white.
The pork ribs do not need to be stewed for too long, 40 to 50 minutes is enough, and they will become soft and rotten. If the ribs are stewed for too long, they will become old and the nutrients will be lost. If you do these 4 steps, it will be difficult to taste the pork rib soup.
