Steps to Make Scallion Chicken(1) Clean the chicken.(2) Boil a pot of water and put the chicken in it to remove the blood.
(3) Put the chicken into a soup pot and add water to cover the chicken. Put two slices of ginger and green onion knots.
(4) Bring to a boil over high heat and cook for 10 minutes, turn over, cook for another 5 minutes, turn over again and cook for 5 minutes. Turn off the heat and simmer for 10 minutes.
(5) Place the cooked chicken in ice cold water, skin side down.
(6) Cool, then turn over until completely cool.
(7) While the chicken is cooling, start making the scallion oil. Separate the white of the scallions from the leaves.
(8) Heat the oil in a pan over low heat and add the scallion whites.
(9) When the white onion starts to burn, put down the green onion leaves. Some of the finer white onions are burnt, so you have to fish them out in time, otherwise there will be a burnt smell in the oil, which will affect the flavor.
(10) when the green onion leaves also began to burn, turn off the fire, fish out the green onion section.
(11) Take the scallion oil out of the pot into a bowl.
(12) Take the appropriate amount of scallion oil and the soup in which the chicken was cooked, and mix them in a 1:1 ratio.
(13) Wash the frying pan, dry it, put it on the stove on a low flame to dry, do not put the oil, put the right amount of salt, the amount of salt should be set according to the size of the chicken.
(14) Fry the salt dry.
(15) Pour in the onion oil sauce blended in step 12 and cook until the salt is thoroughly melted.
(16) This is the final sauce to be poured over the chicken! See, it's fresh out of the pot, nice and hot!
(17) The chicken, which has completely cooled down a bit cold, is removed and cubed, sprinkled with some chopped scallions.
(18) Pour the freshly cooked scallion sauce on top, and you're done!
Tips
Scallion oil can be made more at a time and can be used later. Don't just pour in as much green onion oil as you can. If you are the kind of person who makes as much as you can use, it depends on the size of the chicken to decide the amount of oil to put.
