Ingredients: herring, fat pork, egg, onion, ginger, salt, monosodium glutamate, cooking wine and mung bean starch.
Steps of Hubei fish cake:
1. Kill and wash herring, take clean fish, chop it with a knife, and cut fat pork into pieces.
2. Put the minced fish into the basin, break the egg whites with chopsticks, add the minced fish and stir evenly, add the Jiang Shui and stir in one direction. Add chopped green onion and starch, stir, add salt, monosodium glutamate and pepper, stir until the fish paste is thick, add diced fat, and stir together to form fish paste.
3. Spread the wet gauze on the steamer, pour in the fish paste, smooth it with a knife to a thickness of about 3 cm, cover the steamer, steam for 30 minutes, uncover the steamer cover, dry the water on the surface of the fish cake with clean gauze, evenly spread the egg yolk on the surface of the fish cake, cover the steamer cover, and continue steaming for 5 minutes.
4. Cool the fish cake, then turn it over on the chopping board and cut it into 6 cm wide and 4 cm thick fish cake blanks.
