Method
1. Cut the yam Slice the beef thinly against the grain and set aside.
2. Add 1 tablespoon of sweet potato starch to the bowl, add 1 tablespoon of water to wet the starch, add beef and a little salt, mix well and marinate for 10 minutes.
3. Heat oil, add shredded ginger and stir-fry until fragrant. Add yam slices and stir-fry for a while. Add appropriate amount of hot water to cook the yam. Add meat slices and cook for 3 minutes. Add a little salt to taste and sprinkle with chopped green onion. Remove from the pan and spray. A little walnut oil will do.
