Passing on, in the late Qing Dynasty, there were many vendors carrying loads and baskets selling cold lung slices in the streets and lanes of Chengdu. Using cheap leftover bits and pieces of beef offal, after cleaning, marinating and slicing, mixed with soy sauce, red oil, pepper, pepper noodles, sesame noodles, etc., the flavor is exquisite, cheap and good, especially popular with rickshaws, porters and poor students.
In 1930s, Guo Chaohua, a native of Chengdu, and his wife were engaged in manufacturing and selling cold lung slices. The couple personally manipulated them, walking around the streets, carrying baskets and selling them. Because the leftover material of beef shop is selected as the food, it is cheap and delicious, and it is very popular. People call this kind of cold beef offal "husband and wife scraps". Because the word "scrap" is not pleasant to listen to, and there are beef lung slices in the ingredients, the homonym "lung" of "scrap" is taken and renamed as "husband and wife lung slices". Later, they found that the taste of the cow lung was not good, so they canceled the cow lung. 1933, Mr. and Mrs. Guo set up a shop near Chengdu Banbianqiao (now on the right side of the back door of National Park) for sale. The name of the shop was officially named "Husband and wife lung tablets", and the plaque was inscribed by calligrapher Zhao Yunyu. After several changes, the store moved to the west street of the prefect in downtown street, which expanded its business scale and increased the types of beef noodles. The customers could not only taste lung slices, but also eat pasta to satisfy their hunger.
After the founding of the People's Republic of China, during the period of public-private cooperation, the couple's lung slice shop, like other famous restaurants in ancient times, was merged into the state-owned unit. After several generations' efforts, the couple's lung slices have become a famous cooked food takeaway shop at home and abroad.
