Tianmo
Tianmo is a traditional popular porridge food in Shandong. It is a salty porridge cooked with millet noodles as the main ingredient.
In making sweet foam, in addition to the main use of millet, the auxiliary ingredients include peanuts, vermicelli, cowpeas, spiced dried tofu, and spinach. Wash the millet, soak it in water for two hours, add water and grind it into a paste; cook the peanuts and cowpeas, remove them and drain them into clean water; wash the spinach, tear it into large pieces, and cut the dried five-spice tofu into thin slices; make the vermicelli with water.
Heat peanut oil in the pot until it is seven-mature, add onion and minced ginger and fry until fragrant, then pour the oil into a bowl and prepare to "pour the pot". Put water in a large pot. After boiling, add five spices such as star anise and refined salt. After boiling for a while, remove the five spices and add dried five-spice tofu, spinach and vermicelli. After the water boils, immediately pour in the millet paste and stir while pouring. Cover and cook for about 10 minutes. After boiling the pot, pour the fried onion and ginger oil into the pot, add cooked peanuts and cowpeas, stir with a spoon, turn off the fire, and it will form a sweet foam.
