Anji white tea belongs to green tea, which is mainly produced in Anji County, Huzhou City, Zhejiang Province. Its tea tree is "Baiye No.1", which is a rare variation tea species (low temperature sensitive) with typical albino characteristics, hence its name. Anji white tea is made from fresh leaves of tea trees after picking, spreading, deactivating enzymes, trimming and drying, so it belongs to the category of green tea.
The bud leaves of the new shoots of Anji White Tea are pure white or nearly white. With the growth and maturity of the bud leaves and the change of environmental temperature, the color of the bud leaves will gradually turn green, which is a staged albino species.
Anji white tea is harvested every autumn, and it is made by seven processes: picking, spreading, fixing, primary drying, spreading, secondary drying, collecting ash and drying. Therefore, according to the characteristics of the process, Anji white tea is divided into green tea.
Types of tea
1, green tea. Green tea is a kind of tea that we are all familiar with. It has not undergone any fermentation, so its tea soup is generally green or light yellow, with a natural and fresh fragrance, and it tastes like a spring breeze. The representative ones are Biluochun, Longjing Tea and Xinyang Maojian Tea.
2. Yellow tea. This is a kind of tea which is only slightly fermented. It was produced very early and was recorded in Tang Daizong. The tea soup of yellow tea is golden yellow, but its taste is relatively fresh and light, which accords with a leisurely and comfortable feeling. Yellow tea is represented by Junshan Silver Needle and Huoshan Yellow Bud.
3. Black tea. This kind of tea has a high degree of fermentation, so it is also called fully fermented tea. The aroma of black tea is very unique. The tea soup is red, and it tastes sweet and mellow. It is also famous for this, such as Qimen black tea, which is one of the top ten famous teas in China. The representative famous teas are Qimen Black Tea and Litchi Black Tea.
