Pickled pepper kidneys
Side dishes: garlic sprouts and pork kidneys.
Ingredients: minced garlic, minced ginger, pickled pepper, chopped pepper, dried pepper segments, and dried Sichuan peppercorns.
Method:
1. Cut the pork loin in half from the middle and remove the white film in the middle, otherwise it will be very fishy.
2. Cut the pork loin into the shape of a flower knife and soak it in water to wash off the blood foam.
3. Marinate the kidneys with cooking wine and ginger slices to remove the fishy smell, then wash them with water and let them cool.
4. Heat the oil in a pan, put the kidneys into the pan and stir-fry for five seconds. Remove all the water from the pan and pour out all the water so that it will not wake up.
5. Heat the oil in the pot, add the pickled pepper ingredients, and stir-fry until fragrant.
6. Add the minced garlic and stir-fry for a while.
7. Add the kidneys and stir-fry together. Do not fry for too long. This will make it easier to stir-fry the kidneys. Add seasonings and stir-fry for one minute before serving.
Seasoning: appropriate amount of salt, chicken essence, light soy sauce, oyster sauce and dark soy sauce. Season and serve.
