Introduction of bean curd in Ningyuan
Ningyuan bean curd is a traditional famous dish of Han nationality in ningyuan county, Hunan Province, which belongs to Hunan cuisine. It is a dish with pork and oil tofu as the main materials. The production of Ningyuan stuffed tofu is different from other places. First of all, the water tofu should be fried with tea oil into a well-proportioned, yellow, tough and hollow fried tofu like a peach. Secondly, 80% lean meat, 20% muscle, mixed with a little pig skin, garlic white, red pepper, salt, small powder and peeled water chestnuts, chopped together and made into stuffing. Open a small mouth of the fried tofu, scoop the stuffing into the tofu, and squeeze the tofu into a bulging bun. Then put the raw tofu balls into a pot to cook, and the fire should be large and the water should be appropriate. Cook until the skin of tofu is wrinkled and the soup is just dry, and then add a small amount of lobster sauce water and starch to make delicious meat-filled tofu.
