Method to make the Sweet and Sour Lemon Ice-cream
Scrape the zest of the lemons with a zest scrubber and put it in a small bowl. Squeeze the juice of one of the lemons into it. Add sugar and mix well and keep it in the refrigerator until ready to use. Take 250g of cream and put it in the freezer for 4 minutes.
Take a pan and put two cups of water in it and put a glass bowl on top. Pour the milk into the bowl and bring to a light boil. Add the beaten egg yolks and whisk until the mixture thickens, then take it off the heat and let it cool to room temperature.
Take the cream out of the freezer and beat it with a whisk on high speed until it becomes slightly feathery. Pour in the milk and egg yolk mixture from step 2 and mix well, then pour in the lemon zest from step 1 and mix well.
Pour the ice-cream mixture from step 3 into the ice-cream molds, not too full, and leave some space for the ice-cream to expand.
After 3 hours, you can eat it
