1. Powdered sugar is a kind of white powdery sugar. There are two main production methods. One is the spray drying method, which is to make white sugar into a high-concentration aqueous solution, vacuum spray and dry it. It has the characteristics of uniform powder and good water solubility, but the production cost is high and it requires equipment. There are high requirements in terms of production and process requirements, and only a few developed countries in Europe and the United States have a certain amount of production. Another way is to directly crush white sugar or rock sugar with a crusher. Powdered sugar is divided into two types: white sugar powder and rock sugar powder. The former is usually used in the cooking of Western food, while the latter is mostly used as a sweetener in high-end beverages.
2. Due to the small grain size of powdered sugar, it is easy to absorb water and agglomerate; therefore, two methods are usually used to solve the problem. One is the traditional method of adding a certain proportion of starch to powdered sugar to make it difficult for the powdered sugar to coagulate. But this will destroy the flavor of the powdered sugar; another way is to pack the powdered sugar in a small aluminum film bag, and then seal it in a large package for storage. Use a small bag at a time. Powdered sugar usually clumps after direct contact with air.
