Rice flour meat practice
Composition:
Ingredients: pork belly1000g, glutinous rice 400g, rice100g.
Accessories: 4 tablespoons of sweet noodle sauce, 3 tablespoons of June fresh braised soy sauce, 2 tablespoons of chicken salt, 3 tablespoons of soft sugar, 4 pieces of star anise, 2 tablespoons of cooking wine, appropriate amount of onion, appropriate amount of ginger slices and 80 ml of water.
Exercise:
1. Buy fresh pork belly, wash and drain, and cut into thin and even slices.
2. Put the pork belly into the pot, add onion, ginger, aniseed, sweet noodle sauce, salt, chicken essence, soy sauce, cooking wine, sugar and water for curing. If you like sweet mouth, you can add more sugar.
3. Mix glutinous rice with rice, stir-fry the rice, add star anise and stir-fry the rice until the color is golden.
4. The next step is manual labor. Take out the fried rice and roll it into broken rice noodles with a rolling pin. In order to make the rice flour meat absorb oil well, don't roll it too much. If you want to save labor, use a food processor. Remember not to be too broken!
5. Stir the rice flour and pork belly together, and soak the marinated meat slices in rice flour for 3 hours one by one.
6. The pork belly skin is facing the bottom of the bowl and placed neatly. Filled with rice flour, leveled and steamed in a steamer for 1.5 hours.
