Dried kelp needs to be soaked for about 4 hours. It will be soft after soaking.
Then wash, use a small brush or a clean dishwashing sponge to scrub the surface clean, mainly to remove any debris and grit that may be on the surface. After washing it, you can cook it.
Introducing several methods:
1. Pour water directly into the washed kelp, then bring it to a boil and then reduce the heat to low. It should be simmered for more than 30 minutes. If If you like the soft texture, you can also cook the kelp until it can be pierced with chopsticks, and then take it out.
Cut it into shreds and serve it cold, add some soy sauce, vinegar, minced garlic (or some chopped green onion) and sesame oil, and it will be delicious.
The excess can be frozen in the refrigerator. When you want to eat it, just blanch it in boiling water, and it can be eaten cold or stir-fried.
2. If you are making braised pork, you can add water to simmer the braised pork and cut the washed kelp into cubes and stew together. It tastes very good.
3. After the bone soup is cooked, you can add washed kelp and cook it. The kelp bone soup is very delicious.
4. The summer in the south is hot and humid, so in Guangdong, when cooking mung bean soup in the summer, some kelp will be added to clear away heat and relieve the heat. The method is to wash the kelp, cut it into pieces, and cook it with the mung beans. (Don’t put too much kelp in this, the total amount is less than mung beans). After cooking, you can add rock sugar. The taste is not much different from mung bean soup, there won't be any bad taste.
Note: Methods 2, 3, and 4 are only delicious when made with washed raw kelp, so that the flavor of the kelp can be retained. If you use the processed kelp in step 1 to roast meat or make soup, it will not be enough. Delicious.
