Descale and gut the horsehead fish, clean it and marinate it for 20 minutes by applying ? tsp salt all over the fish. Cut ginger into julienne strips, garlic into slices and spring onions into chopped scallions

Heat a wok on low heat, put 2 tbsp of oil in it and fry the horsehead fish

After the fish is fried by turning the other side, put the shredded garlic and ginger on the fish and continue to fry

Add 200ml of water, put ? tbsp of salt and cook for 20 mins with the lid closed
