Beggar chicken is a traditional famous dish in Changshu, Jiangsu Province, so the beggar chicken in Changshu, Jiangsu Province is the most authentic. Beggar chicken, also known as Changshu beggar chicken and braised chicken, is prepared by brushing the processed chicken with juice, then wrapping it with lotus leaves, pig net oil and yellow soil layer by layer, and throwing it into a firewood pile for stewing. The method of making beggar chicken is similar to "cannon dolphin", one of the "eight treasures" in Zhou Dynasty. "cannon dolphin" is a dish made by first wrapping suckling pigs with clay, grilling them and further processing them.
