Coconut and red bean cake
Materials:
A small bowl of adzuki beans, a packet of glutinous rice flour, half a can of coconut milk, cornstarch, brown sugar in moderation, miscellaneous dried fruits at random.
Practice:
1) soak red beans overnight to rise, into the pot on low heat until cooked.
2) Add coconut milk, brown sugar, dried fruits and mix well, then add glutinous rice flour and a small amount of starch, stirring to form a thick consistency.
3) Put the batter into a microwavable container with a lid or wet paper towel on top, and turn it in the microwave for 4 minutes; then turn the formed rice cake dough over and turn it for another 3 minutes.
4) Place the rice cake dough into a suitable container and press it down to form the dough. Once cooled, it is ready to be sliced and served.
