Practice:
1, put red kidney beans in the refrigerator and soak them in water for one night, add more than four times of water to boil, and simmer for about one and a half hours;
2. When the red kidney beans are soft and rotten, if there is still water in the pot that can be poured out, add enough white sugar, continue to boil the thin water, add a teaspoon of salt, and stir in one direction until the beans are soft and rotten, and the bottom of the pot is dry;
3. Mix corn flour and glutinous rice flour evenly according to the ratio of 1: 1;
4. Dilute the yeast with warm water, pour it into the flour a little bit, and mix it evenly with chopsticks while pouring it. It is appropriate to mix it until the dough can be bonded and not sticky;
5. flatten the dough by hand, cover it with plastic wrap and put it in a warm place for fermentation for two hours;
6. Squeeze a small piece of dough in the palm of your hand, put in a small piece of bean stuffing, drag the dough with one hand, and slowly push the dough up with your thumb and forefinger with the other hand until it is closed;
7. Close the dough downward and rotate the dough with both hands to reunite;
8. After the water in the pot is boiled, put in the wrapped sticky bean bag and steam for about fifteen minutes. Don't burn too much and steam for too long, otherwise the sticky bean bag will crack easily.
Making tips:
1, if the room temperature is not enough during fermentation, the dough can be fermented in a steamer, and the water temperature in the steamer is slightly higher than the body temperature, or it can be fermented in the sun;
2, and a good dough is flat, usually with a fist and a finger back, the old people use this method;
3. When making sticky bean bags, some people like to make them into a pointed shape. Even if they don't make them into a pointed shape, they should make them slender, because they will come down a little when steaming;
4. The bean stuffing of sticky bean bags was generally made of red kidney beans at the earliest, and now it is also commonly made of red adzuki beans, with different tastes;
5. You can use sticky corn flour, glutinous rice flour or yellow wheat to make sticky bean bags;
6. The ratio of glutinous rice flour to corn flour I use is 1: 1. If I like sticky rice flour, I can use 1.5: 1. If I like the taste of corn flour, I can use 1: 1.5. I don't like the smell of corn.
7. When steaming sticky bean bags in Northeast China, you usually put cotyledons or corn leaves under it. I don't have cotyledons and corn leaves, so I just put a lettuce anti-sticking pot under it.
