Wash the fresh squid to remove the internal organs, and then cut into thin shreds.
Boil a pot of water and add the shredded squid when the water boils.
Be careful to observe that before the water boils again, turn off the heat when the squid is half-cooked and not completely curled. Remove from the water and set aside.
Slice a clove of garlic thinly and whisk all the seasonings together (right side of the bowl), taste for yourself, and add a pinch of salt if you think it's bland. Finely slice the ginger and flatten the rest of the garlic and put it together (bowl on the left).
Slice the bell pepper and onion finely, then put them on a plate with the squid.
Heat a frying pan and pour in the oil, a little more than you would normally fry. Keeping the heat at maximum, add the shredded ginger and garlic and stir-fry to bring out the flavor.
Pour the shredded squid, shredded green pepper and shredded onion into the pan together.
Immediately afterward, immediately pour in the previously seasoned ingredients and stir-fry for about 30 seconds to remove from the pan.
