Medium Gluten Flour 300g

Prepare the flour and set aside.

Mix the salt with the water so that the salt melts in the water, then pour the salt-water mixture into the prepared flour.
Knead to make a stiff dough.
Transfer the dough to a slightly larger bowl.
Pour water in the basin, just enough to not submerge the dough.
Wash your hands and start kneading the dough in the water.
The dough is ready when all the water is milky and a little sticky.
Now we get two things. That's the wheat starch solution, and the gluten. At this point the gluten is ready.
Put the wheat starch solution into a small stainless steel dish and put it on the electric pie pan to heat up. Stir with chopsticks while heating to prevent the pan from getting mushy.
Heat for about 5 minutes and the wheat starch dough will have taken shape.
Remove the small stainless steel pan from the electric pie pan and let it cool before using.
The processed wheat starch can be used to make shrimp glue; the gluten, can be fried. Both are very delicious ingredients, is not it very interesting, do try!
