1. Cut the meat into cubes as thick as your thumb, add a little dark soy sauce, salt and cooking wine, and set aside for 10 minutes.
2. After setting aside, use a little starch to sizing it and chop the dried chilies into small pieces.
3. Put a handful of white sesame seeds in the pot and slowly fry over low heat until the sesame seeds turn golden brown, turn off the heat and put them into a bowl.
4. Put oil into the pot, the temperature of the oil should be 50%. Then add the chili peppers. When the chili peppers turn red, add the diced meat to the pot and stir-fry. When the diced meat turns golden, add the chopped chili peppers, dark soy sauce and the prepared peanut sauce.
5. Finally add a small amount of chicken essence and white sesame seeds, stir-fry a few times and it is done.
