The suitable conditions for mushroom storage are 0℃ and 95% relative humidity. The use of brine, citric acid, ascorbic acid, sulfur dioxide or steam heat treatment can passivate the polyphenol oxidase activity and prevent enzymatic browning; the use of metal containers for mushrooms should be avoided in storage and transportation to prevent non-enzymatic browning.
Processing methods
1.air-conditioned storage
(1)Spontaneous air-conditioning of mushrooms in 0.04--0.06 mm thick polyethylene bags, through the mushroom's own respiration caused by the bag of low-oxygen and high carbon dioxide environment. The bag should not be too large, generally 2 - 4 pounds of holding capacity is appropriate, the quality remains unchanged at 0 ℃ for 5 days.
(2) carbon dioxide filled mushrooms in 0.04 - 0.06 mm thick polyethylene bags, filled with nitrogen and carbon dioxide, and keep it at 2 - 4% and 5 - 10%, respectively, at 0 ℃ can be suppressed under the umbrella and browning.
(3)Vacuum packing the mushrooms in 0.06--0.08 mm thick polyethylene bags, vacuuming to reduce the oxygen content, can be maintained at 0 ℃ for 7 days.
2. Ice storage method

4. Drug treatment

If the salt water is washed and then rinsed with 0.1% ascorbic acid or 0.1% citric acid for storage, the effect is better. Drain and refrigerate in a plastic bag.
