Legend has it that at the end of the Qing Dynasty, a woman named Zoe in Zhengyi Town found that a kind of wheat straw sauce was a good raw material for making Qingming cake green juice, while the jiaozi made by hand grinding was softer and more delicate, not sticky, and did not break, harden or change color after being stored for several days. Later, Grandma Chen, a Zoe bakery in the south of Zhongqiao in Zhengyi Town, learned the secret recipe. Since then, Qingming cake has been supplied to the market, becoming a snack with full color, flavor and local characteristics.
