Northerners have a special liking for pasta. Among the many kinds of pasta, fried cake is our favorite childhood delicacy. It is boiled with wheat flour, stuffed with fillings, and fried in a pan. It has a golden color, crispy skin, and chewy texture.

In fact, glutinous rice is abundant in the south of the Yangtze River, and wheat is mostly produced in the north. In the closed era, there was no such thing as glutinous rice. Wrap in an appropriate amount of fillings and pinch the seal tightly to prevent the filling from being exposed. Be careful not to touch the sealing area with oil.

7. Heat oil in the pot, wait until the oil temperature is 40% hot, then add the cake embryo and start frying, wait until it is set, then flip the other side.

Tips 1. Use boiling water that has just been removed from the heat to scald the noodles to maintain a soft and waxy texture.
