Dried peppers bought in the market should be cleaned first. However, dried peppers used to make Chili noodles cannot be washed with water. If washed with water, let the dried peppers get wet and then fill them with water. When frying in an oil pan, the oil will not become hot because there is water in it, and it will not be effective. So remember not to wash with water.
The cleaning method of dried peppers is actually very simple. Use a big pot cover, put the dried peppers in, and then wipe them clean with a clean cloth. When wiping, if you find that there are pepper heads inside, you should pull out the pepper heads inside in time.
After cleaning it up, you can fry it in the pan. If everyone fried peanuts, it would be much easier to fry dried peppers. Because fried dried peppers are the same as fried peanuts. They all pour the oil into the pot, and then fry the peppers in the pot. Until the oil is hot, the dried peppers can be cooked (the fire of frying the dried peppers must be small).
Stir-fried dried peppers are put aside to cool (peppers should not be crushed). After cooling, pound garlic into Chili noodles. Don't put too much at a time. Stir the hot oil evenly with chopsticks when pouring it in, otherwise the hot oil will fry the upper layer of Chili noodles. If possible, it is recommended to stir Chili noodles while pouring hot oil. The stirred Chili oil can be eaten after cooling.
