1. Wash and drain the whitebait, as shown in the picture.
2. Mix the eggs, cornstarch, salt, light soy sauce and black pepper into a paste, pour it into the paste and mix well with the whitebait, as shown in the picture.
3. The small fish in the oil pan at 70 degrees will be connected together and not loose because they are mushy, as shown in the picture.
4. Fry until golden and take out, as shown in the picture.

Whitebait, also called California whitebait, is a small marine edible fish. The body is slender, light-colored, 5 to 8 inches (12.5 to 20cm) long. There is a silver stripe on each side of the body from the gills to the tail. There are no teeth in the mouth. Little whitebaits live only along the coast of Southern California and the Pacific coast of Baja California (Mexico). On certain bright nights between March and August, small whitebait will come ashore with high tide to lay eggs.
