Minced meat and eggplant

working methods
1. Mix minced meat with 1/3 tbsp cooking wine and 1/3 tbsp soy sauce, and marinate for 15 minutes.
2. Cut the eggplant into strips, then sprinkle with a little salt and marinate for 3-5 minutes.
3. Wash ginger, garlic and shallots, scrape ginger and garlic into powder, and chop shallots for later use.
4. Heat the wok and add oil. First, put Jiang Mo, minced garlic and dried chillies (cut into small pieces) into a wok and stir-fry. Then, put the marinated minced meat into a wok and stir-fry over high fire until it changes color.
5. Pour the marinated eggplant into the pot and stir-fry over medium heat until soft, then add a little balsamic vinegar, soy sauce and white sugar, then cover and simmer for about 5 minutes over medium heat, and then sprinkle with shallots.
