What is a leek box?
Method one
1, wash leeks and dry them for later use.
Enlarge the flour into a plate, sprinkle some salt and mix well, add 1 bowl of water and eggs, mix well with chopsticks, knead into a smooth dough, cover and wake up for half an hour.
3. Prepare the stuffing when you wake up, cut the leek into fine powder, put it in a bowl, pour in some peanut oil, a few drops of sesame oil and pepper, and mix well.
4. Chop the pork into minced meat, add salt and a little soy sauce to taste.
5. After the oil in the pot is heated, put the minced pork into the pot and spread it out. Stir-fry and serve. After cooling, put it into chopped leeks and mix well to make stuffing.
6. Divide the proofed dough into 4 parts, sprinkle dry flour on the chopping board, and roll a small part on the chopping board to form a round dough.
7. Put the leek powder on the surface and fold the edge into a beautiful flower-shaped oil angle. Sprinkle some salt on one side of the sliced meat, then fold it in half and compact the edge (to prevent stuffing).
8. Boil the oil, put the leek box in the pot, fry both sides until golden brown, and then you can go out.
Method 2
1. Peel the raw pork and cut it into diced rice with a knife. Wash leeks and cut into small pieces. Put the spoon on the fire, add pepper oil, when the oil is hot, first add pork and Jiang Mo into the fried pork, then add soy sauce and monosodium glutamate and stir-fry to get the spoon, put it into the pot, then add leek and mix well to make the stuffing.
2. Divide the flour into two parts: 325g and175g. First, pour the extra part into a basin, add 75g of cooked lard, knead it evenly, then pour warm water (while stirring) to beat your ears, knead it evenly and tie it up to make leather noodles. Then,175g flour and 75g cooked lard are mixed and kneaded into crispy noodles.
3. Knead the two kinds of dough into long strips and pull them into five noodles with the same number. Press the dough into a round dough, wrap it in pastry dough, flatten it by hand, roll it into a rectangle with a rolling pin in one direction, then roll it up and flatten it by hand, and then roll it out. Finally, roll them into a 6 cm long roll, cut them into two equal sections in the middle with a knife, and stand down on the watch case with the knife. Then put the stuffing in the middle of the pancake, knead the edge into lace, put it in the oven and bake it for a few minutes on low heat.
4. Add oil to the wok and fry on both sides.
skill
Adding vermicelli to the stuffing can absorb the water in leek and avoid soup. Can't roll lace, you can press it on the edge of the dough with a fork. [ 1]
