Stewing method

The best way to cook bird's nest is to stew it over water with slow fire, but it is also important to prepare it in advance.

2. Hot water (recommended for emergency use). Also known as soaking hair, boiling hair and stewing hair. The dried bird's nest material is immersed in hot water, and the seepage velocity of water molecules is increased by heating, so that the dried bird's nest material is fully expanded, thus achieving the effect that it is difficult to increase water at room temperature.

When making bird's nest, we should adjust the water temperature and the time of making bird's nest according to the season and the tenderness of bird's nest. Hair should be checked and adjusted frequently to prevent it from leaving a hard core or causing dissolution. The prepared bird's nest should be soaked in cold water for later use, but it should not be stored for a long time and should be used as soon as possible. The water and tools for moistening the bird's nest should be clean, and oil should not be stained, otherwise it will affect the hair quality.

(2) Soaking: soak the dried bird's nest in cold water to soften, remove impurities with bamboo sticks, then put it in a boiling water pot and cover it for half an hour. If it does not meet the requirements, soak it again. When the bird's nest is soft, slippery and swollen, it can be taken out by crushing and immersed in cold water for later use.

(3) Evaporation: firstly, soak the dried bird's nest in 50-55 degree water until it is water-cooled, then soak it in 70 degree water until it swells, take it out, remove impurities with bamboo sticks, scald it with 80 degree water, clean it, put it in a bowl, and steam it with low fire until it is loose and soft.

(4) Preparation of stone powder: firstly, soak the bird's nest in cold water until it becomes soft, pick out feather impurities with a bamboo stick, then light the pot, add clear water to boil, add axe brand stone powder (50g of bird's nest and 2g of stone powder), put it in the bird's nest, cook it for 8 minutes with low fire (water is not allowed to boil), and take it out when it is extremely brittle, then take it out with clear water, wrap it with fresh-keeping paper (portions) and put it in the freezer.

The water temperature and time for making hair should be properly adjusted according to the season and the texture of bird's nest, and should be checked frequently to prevent the hair from being opaque or hairy. Hair should be soaked in cold water, but it should not be stored for a long time. The water and tools for expanding bird's nest should be clean, and there should be no oil stains and iron pots, otherwise it will affect the hair quality and color of bird's nest.
