Practice: Wash the fresh shrimp, cut off the whiskers, open the back with scissors, take out the shrimp line, chop it gently on the shrimp with a kitchen knife, soak the mung bean vermicelli in cold water for 30 minutes in advance, cut it into two pieces with scissors, spread it on the bottom of the plate, and spread the shrimp with open back on the surface of the vermicelli.

2. Braised prawns in oil
Ingredients: prawn, onion, tomato sauce, sugar, cooking wine, salt, oil consumption, minced garlic and coriander.
Practice: First remove the shrimp line, cut along the shrimp back and pick it out. Pour the vegetable oil into the pot and heat it to 80% heat. Then, pour the shrimp into the oil pan and fry until the shrimp changes color. Take out the shrimp, then leave the base oil, add minced garlic, tomato sauce and sugar, and stir-fry until fragrant. Then, pour the shrimp into the pot, pour the cooking wine, consume oil and proper amount of salt, add the onion, and cover it for about 2 minutes.
3. Salted shrimp
Ingredients: fresh shrimp, red pepper, cooking wine, salt, onion, garlic, ginger, salt and pepper.
Practice: First, wash the shrimp in clear water, then scrape it from the second section of the shrimp back with a knife, not too deep, then take out the mud line, put it in a bowl, add salt and cooking wine, mix well and marinate, wash and chop ginger, pepper and onion, peel garlic and cut into small pieces.
Pour an appropriate amount of corn oil into the pot, pour the marinated shrimp into the pot when it is 70% hot, fry it until it becomes discolored and bent, then take it out, then pour it into the pot again and fry it once, drain the oil when the shrimp is fried to golden brown, leave a little oil in the pot, heat it, pour in spices to make it smell, then pour the fried shrimp into the pot and stir fry it for a while, then add salt and pepper to mix well, taste it, and finally pour in spices.
4. Boiled shrimp
Ingredients: shrimp, salt, onion, coriander, garlic, soy sauce and ginger.
Practice: cut off the spikes of shrimp whiskers, shrimp feet and shrimp heads. Break the head on the side (don't break it), tear off the mud bag and shrimp line (together), wash it for later use, and add water, salt, cooking wine, shredded ginger, chives and a little oil to the pot. Boil. After the water boils, pour in the shrimp and take it out for 2-3 minutes.
Mixed dipping sauce. Chop garlic and coriander and put them in a small plate. Add a little sugar, sesame oil, stir-fry and soy sauce, pour into a plate and mix well. Serve.
