Brewing is to explain the stuffing. Tofu, snail and other main ingredients are stuffed, sandwiched, coated or wrapped, and then heated to make food. You can try this method in Leping. Brewing has developed snail brewing, bean sprout brewing, pomelo peel brewing and so on.

The stuffing is mainly meat stuffing, and most of them are chopped and stirred with lean meat and mushrooms.
Pingle's most famous dish is pomelo peel wine, which is made from Shatian pomelo peel produced locally. The key to brewing pomelo peel is the treatment of pomelo peel. Peel off the green peel of grapefruit with a knife, leaving a white spongy inner layer, then boil it in water, take it out after boiling, soak it in cold water for 3-4 hours, then squeeze out the bitter water from the grapefruit peel and soak it in fresh water.
this step is repeated 7-8 times until the extruded water becomes colorless and transparent. Squeeze the pomelo peel dry, cut it into squares or triangles about 6 cm wide, cut a hole in the middle, fill it with the mixed stuffing and smooth it. Teak peel brewing. Luo Tian wine-making is also one of the "eighteen kinds of wine-making". Put the bought snail in clean water for 2-3 days and let it spit out all the sediment in its stomach. Wash the snail, cook it in a pot, take out the meat of the snail, chop it with pork and mint, adjust the taste and stuff it into the snail shell.

Soaking bean sprouts is the most time-consuming and laborious dish in "Eighteen Brews". There are two methods: one is to hollow out the bean sprouts vertically with an embroidery needle, then fill in the minced chicken and stir-fry them in chicken oil. Second, take fresh bean sprouts, put them in water, cook them until they are soft and rotten, arrange about 2, tie them at both ends with a leek, then put the chopped meat into the bean sprouts and cook them in a soup pot.
