Boss Dried Fish is one of the characteristics of Weihai’s air-dried fish. The raw materials used for drying are very particular, making the food more authentic.
The most classic methods are:

2. Stew boss’s dried fish with vegetables
1. Hand-shredded dried boss
Soak in water for about 4 hours
After soaking, place it in the oven, brush both sides with oil, and bake until both sides are golden brown. (You can also adjust it to your favorite taste during the baking process and brush it with some hot sauce or cumin)
After baking, just tear it into strips and put it on the plate. Just tear the boss apart by hand and you're done. Isn't it very simple?
2. Stewed Dish with Boss Dried Fish
Soak Boss Dried Fish for 4 hours, cut into pieces and blanch with hot water.
Put onions, ginger, garlic, aniseed, dried chili peppers, and pork belly into the pot, then add an appropriate amount of soy sauce, oyster sauce, salt, potatoes, and beans. After frying, add the blanched boss dried beans together. Just simmer.
This dish is delicious and rich in aroma.
