How to make Langzhong Youxiang?
Youxiang, also known as Xiangxiang pot or fried cake, is a round and thick fried dough cake.
The oil fragrance in Langzhong is different from the oil fragrance made elsewhere. It is not round cake-shaped, but cylindrical, much like a cup-shaped cake. The fried oily skin is yellow and crispy, the inside is soft and delicate, and it tastes oily and fragrant. Langzhong's oily aroma is favored by many foreign tourists, especially middle-aged and elderly people. The long-lost smell of lettuce oil in the oily aroma always reminds them of past memories.
1. Dissolve the yeast with warm water, add salt to the flour and mix well. Pour in the yeast water and mix into dough, and knead it into a smooth dough.
2. Cover and ferment until it is two and a half times the size. When poked with your hand, the fermentation is complete without collapsing or shrinking.
3. Add the beaten eggs and knead evenly
4. Add baking soda and an appropriate amount of vegetable oil, an appropriate amount of flour and knead evenly, cover and let it sit for 20 minutes.
5. Divide the dough into small doughs
6. Roll the small dough into a round shape and flatten it into a cake base. Make two cuts in the middle without cutting.
7. Heat the oil to 50% and put in the cake dough.
8. Fry until it bulges and becomes golden in color.
