The method is as follows:
1. After thawing the steak at room temperature, do not wash it, and directly use kitchen paper to absorb all the water on the surface.
2. Gently pat the back of the knife on both sides of the steak, and then prick some small holes with toothpicks to make the steak more tasty and tender.
3. Sprinkle freshly ground black pepper and pepper on both sides of the steak. Marinate for about 15 minutes.
4. Heat the pan, add a piece of butter, you can use conventional cooking oil or olive oil, add the steak, adjust the fire, and fry until the steak bleeds.
5. Stir-fry over medium heat for 3 seconds until it is cooked to your liking. If you like it fully cooked, you can fry it for a while. Fry all the sides again, and then take out the pan and put it on the plate.
6. Mix black pepper sauce, take a small bowl, 1g oyster sauce, 5g soy sauce, 2g starch, 1g black pepper, 1g sugar and 5ml water and mix well. Pour it into the pot where the steak is cooked, cook until the soup is thick, and then pour it on the steak.
