He gets up in the middle of the night every day to knead the noodles, and always observes the wind direction. If the wind is from the south, he will add less water to knead the noodles; if the wind is from the north, he will add more water to knead the noodles, because the south wind rises and the north wind recedes.

After kneading the dough, he spread a layer of sesame oil and kneaded it together again. He repeated this five or six times until the dough was mixed and set aside for later use. A bucket stove was often used to make sand buns. The stove surface was shaped like a "chicken coop stove" for easy storage.

There is a two-story wooden rack next to the pot and stove for easy operation and placement of utensils.

The operation process is: put clean pebbles (less than one inch in diameter) into an iron pot to preheat, add cooking oil from time to time to stir the pebbles, when the pebbles are hot in the pot, scoop out half of them and put them into a spare pot.

3. Rice cake: Rice cake is also a food made from finely chopped rice, but the method is slightly different from Zengren cake. Zengren cake is made by grinding rice into powder, frying it until it is half cooked, and then steaming it, while rice cake needs to be slurried.

Pour the hung rice milk into the circle; you can also pour it directly into a steamer covered with fine white cloth, lightly coat it with red and green silk, and steam it in a boiling water pot for 20 minutes until it is cooked.

Cut with lines, most of them are diamond-shaped; rice cakes are white in color, soft and sweet, with delicious pink meat. They are a seasonal snack in summer and autumn.

4. Dry pulp cakes and soda cakes: Dry pulp cakes and soda cakes are also popular snacks.

Liu Jinbao is more famous for making dry rice cakes. His steamer is bigger than others. He uses his hands to pick up the rice milk in the rice bowl and pour it into the pot. He builds four layers in one pot so that the rice milk does not fall.

After putting it on the steam, stop the heat and simmer for a while, then use a spatula to scoop it up. The bottom of the cake will be yellow and the meat will be white, and it will be caramelized and sweet.

5. Mooncake: Mooncake is a traditional snack during the Lantern Festival every year.

A few days before the Lantern Festival every year, people are busy sifting the rice and grinding the fine rice into powder; the young people carry bamboo baskets along the riverside slopes and use small shovels to pick up local vegetables (
