Pangxiang is a crustacean animal with a variety of feeding habits. It eats decaying substances, tiny microorganisms, shells and the like, and loves to bite off our rice and reeds to suck the juice inside. Plus, Pangxiang loves to dig holes, which is very destructive to farmland.

When I was a child, there were so many crabs in the river in front of my house. Once I walked along the river after school and picked up a bag full of 5 kilograms of fertilizer. My friends and I carried it back and asked an adult to cook it for us. As a result, the adult said that it must be poisoned fish in the river. Otherwise, how could it be so easy to pick it up? Then we took it back to the river and put it back.

In some places, the glutinous rice and distiller's grains are ground together, added with salt, white wine, ginger and star anise, and then marinated in the jar for one month before eating.

it is called stone crab in northern Zhejiang. In the past, there were many ditches. As long as there was a lump of fresh mud in the hole, there must be a stone crab in it. Generally, the hole is very shallow, so you can dig it with your hands. There is not much meat, but it is delicious. Our practice is to mix flour and eggs evenly, soak the crabs in them, and then fry them in an oil pan. When they turn golden, they can be eaten.

Some places in Northeast China call this thing "Sao Clip", which is everywhere in the reeds. Panjin is rich in crab, which is very fat. What no one eats is ground crab tofu, which is a traditional local specialty food.

I took my son back to my hometown and went to the stream to let him experience my childhood fun. The stream has been treated as clear as when I was a child, and all the small fish and shrimps have come back. However, this little crab can't be found. All the little crabs that used to be found when the stones were turned down at will are gone.
