Ma Yuan Ma Yuan is Ma Tuan. It is called Ma Tuan in North China, Ma Yuan in Northeast China, Zhenbao in Hainan, and Youdui in Guangxi. It is a Han nationality specialty snack and a type of Chinese fried pasta.
It is made of fried glutinous rice flour dough and added with sesame seeds. Some are filled with sesame paste, bean paste and other fillings, while some are not.
It is also a common New Year food in Guangdong, Hong Kong and Macao.
Ingredients: 250g glutinous rice flour, 75g glutinous rice flour, 75g sugar, white sesame seeds, appropriate amount of bean paste filling.
Ma Yuan (ie Ma Tuan) 1. Pour hot water into the flour, mix evenly, and knead into a soft dough.
2. Add sugar to the glutinous rice flour and mix evenly, add an appropriate amount of baking powder (or dough that has been awakened by yeast flakes), then add the above flour dough, add an appropriate amount of water and knead it into a slightly soft dough.
3. Knead into long strips and divide into several small portions.
[Gourmet China] 4. Flatten the small portion, add appropriate amount of bean paste filling, wrap it up and roll it into a round shape.
5. Wet your hands with a little water and knead the sesame balls a few times to coat the surface with water to increase the stickiness.
6. Throw it into the sesame pile and roll it with sesame seeds, then take it out and knead it well, and knead the sesame seeds into the sesame dough.
7. Heat the oil in a pot until it is 70% hot, add the dough, and fry over low heat until the surface is golden brown.
Tips: 1. The ratio of glutinous rice flour to glutinous rice flour is 1 catty: 3 taels. If the glutinous rice flour is too little, it will not be brittle, but if it is too much, it will easily crack.
2. The ratio of glutinous rice flour to sugar is 1 catty: 3 taels, so the taste should be just right.
3. Method 6 is to ensure that sesame seeds do not fall off the sesame ball base in the oil pan.
4. The sign that the oil temperature is 70% hot is when you put your hand above the oil pan and it just feels hot. If the oil temperature is high, it will easily burn, and if the oil temperature is low, the sesame seeds will easily fall off.
5. Step 1: Add this for better taste, otherwise pure glutinous rice will stick to your teeth and be too greasy.
6. Step 7: Use a spoon to press into the oil. Slowly you can see the center is hollow and the hemp balls will expand.
