For me, "rural flavor" is nothing more than beef noodles.
I'm from Gansu. Although I'm not a native of Lanzhou, I like eating beef noodles very much. There are also many beef noodle restaurants in my hometown. People in my hometown also like to get up early and eat a bowl of beef noodles before going to work. Many students who go out to school will come to eat a bowl of beef noodles in a hurry when they get home in winter and summer vacations.
It's rare to get authentic beef noodles when you go to school in other places. Children in Lanzhou know that we only have one name for beef noodles, and we can't say "beef Lamian Noodles".
beef noodles pay attention to "one clear, two white, three red and four green wuhuang", and none of these five items is called beef noodles. The green garlic sprouts and coriander with red oily pungent seeds make people have an appetite. Before eating, take a sip of soup, which is very refreshing and moistening the intestines.
Noodles are also classified. What is big, wide and thin, and what is capillary leek leaves? I prefer to eat thin ones, because I think the thin ones are too thick to bite, and the thin ones are too thin to chew, but just fine!
Shanxi has Daoxiao Noodles, Shaanxi has oil-sprinkled noodles, and Chongqing has Chongqing small noodles, each with its own strong points, but as a "rural flavor", beef noodles are unique to Gansu people.
