The reasons why Huimian Noodles can't leave the province are as follows:
1. The practice is complicated. Huimian Noodles needs to boil bone soup and pulled noodles. The bone soup needs to be boiled with mutton and sheep bones for at least 5 hours, and seven or eight Chinese herbal medicines should be added until the soup is like milk. Noodles are made of high-gluten flour, and the process pays attention to "one pull, two falls, three pulls and four tears". The cooked noodles are smooth, soft, elastic and chewy. Accessories such as kelp silk, thousand pieces of silk, vermicelli, coriander, quail eggs, etc. should be added to make a bowl of Huimian Noodles, which is time-consuming and laborious.
2. There is no uniform standard. Take Lanzhou beef Lamian Noodles, which is spread all over the country, as an example. Although it is thousands of miles apart from the east, the west, the north and the south, the standard is the same. It has the characteristics of "one clear, two white, three red, four green and wuhuang", so it tastes the same everywhere. But Huimian Noodles, Henan Province is different. As far as Henan Province is concerned, Zhengzhou, Fangcheng and Xingyang have different practices, not to mention the province, and the taste is full of flowers. Therefore, if you eat Huimian Noodles in other places, the one you eat may be delicious, but the taste of the next one will be greatly changed, which will inevitably make people disappointed, thus reducing their impression of it.
3. The price is more expensive than other noodles, and it lacks competitiveness. When I traveled to Zhengzhou, Henan Province, I ate authentic mutton Huimian Noodles, which was more expensive. A small bowl of 14 yuan and a large bowl of 2 yuan were relatively reasonable. After all, the method was complicated and the materials were practical, which was acceptable. But Lamian Noodles, the Lanzhou beef, is only eight or nine yuan a bowl, and Huimian Noodles is about 5% more expensive than it. You know, a meal in 2 yuan is still relatively expensive for ordinary people, and it's ok to taste it occasionally, but if you want to eat it every day or every meal, you can't afford it. Most people will choose the cheaper one.
4. Not to the taste of most people. Mutton Huimian Noodles's meat is mutton, and the soup is mutton soup. We all know that mutton has a strong smell. Even if it is handled well, it still has a little taste, and most people still refuse it. Beef doesn't smell fishy, so Lanzhou beef Lamian Noodles is very popular all over the country, because it meets the public's taste.
