Mooncake making process: Ingredients: 120 grams of conversion syrup, 40 grams of peanut oil, 4 grams of water, and 160 grams of ordinary flour.
1. Mix the syrup, peanut oil and water together, stir until combined, then add flour in small amounts and several times, finally knead into a ball, seal and refrigerate for at least 2 hours.
2. After resting, divide the dough into portions of approximately 25 grams each, and the filling portions of approximately 55 grams each.
3. Flatten the filling slightly and use the tiger’s mouth to gather the filling as tightly as possible.
4. Apply a thin layer of corn starch on the surface of the agent, and then press the pattern quickly and hard with the mold.
Before putting it in the oven, lightly spray a little water on the surface to prevent it from drying out.
Preheat the oven in advance and bake the middle layer at 190 degrees for 6 minutes to set.
