production process: 1. cut the pig's trotters in half, wash them, and pull out the pig's hair left on the pig's skin, preferably each cut pig's trotters has a skin; 2. After the water in the pot is boiled, put the pig's trotters in the water for about three or four minutes, then take them out and rinse off the oil slick impurities. 3. Re-pour water into the pot. The amount of water is subject to whether it can pass the trotters. Add ginger slices, star anise, fragrant leaves, cooking wine, soy sauce and a spoonful of sugar. If you like spicy food, add a few dried peppers.
Cover the pot and cook the trotters. Different pots take different time, so you can adjust the time according to the pot you use. If you are not sure, you can also try to insert the skin with chopsticks. If you can insert it easily, it is just right that the skin is not ripe and broken.
If you are not sure about the saltiness, you can also taste the taste during cooking. If it is not salty enough, add a little salt. 4. Remove the cooked pig's trotters and drain the water. You can also use kitchen paper to absorb excess water. Be sure to drain the water as much as possible, otherwise it is easy to spill oil during frying. 5, hot pot refueling, the amount of oil should not exceed the trotters, when the oil temperature rises to 6% to 7%, turn to medium heat and fry the trotters in the pot. Be careful when putting pig's trotters, stay away from the oil pan, or take something to block them, so as to prevent the residual water in pig's trotters from causing oil splashing;
fry the pig's trotters until the skin becomes discolored and slightly wrinkled, and then take out the oil control. Don't fry them too much, or they will be too hard.
6. When the oil temperature rises to 8% to 9%, pour the trotters into deep frying. This step can force out the excess oil in the trotters and make the surface color of the trotters look better. It only takes about a minute, and when the pig's trotters are golden yellow and crisp but not hard, they can be fished up and drained. 7. Pour out the oil in the pot, just the amount of oil on the wall of the pot, pour in the minced onion, ginger and garlic and saute, pour in the fried pig's trotters and stir fry, then sprinkle with salt and pepper powder and stir fry evenly to get out of the pot. Sprinkle some chopped green onion after serving.
if you don't have salt and pepper powder at home, you can also make it yourself: stir-fry the pepper and salt at a ratio of 2:1 until the salt turns a little yellow, and then pour them into a cooking machine and grind them into powder.
