When it comes to Yunnan, the first thing that comes to mind is Dali, green mountains and green waters, blue waves and white clouds. For such a beautiful place, nothing is more suitable than traveling. When people go to Dali excitedly, they are not only impressed by the beautiful scenery there, but also attracted by the food there. We all know that there are many ethnic minorities living in Dali, where there are not only local characteristics, but also some ethnic foods. Let's introduce them below.
1. Bait silk:
As far as Dali is concerned, the most famous meat bait silk is Weishan pā (generally written with the word "Ba" beside the word "fire", but there is no such word). It is made of soup made of pig bones and pig elbows, supplemented with simple spices. When eating, you can add pickles, pickles, chopped green onion, garlic paste and hemp according to your own preferences. Most of the good pā meat baits make a fuss about the soup. The better the soup is cooked, the more delicious the baits will be. Here, I recommend a favorite bait shop next to Shunfeng Restaurant in Baizhou, the city. Their house is full every day, and they don't sell the baits when they are sold out, usually until around two o'clock in the afternoon, and sometimes they are sold out at lunch, which is quite tight. In addition, their family will sell pot-stewed vegetables in the afternoon, which is also very delicious. In addition, the method is dry mixing, which is very different because of the different marinades in snack bars. I also recommend the same one in Baizhou, my favorite. Muslim restaurants run by Muslims living in Dali are also unique, and there are many delicious Muslim bait shops in Dali. Muslim bait mostly uses beef bone to boil soup base, which tastes mellow. The topping is usually fried sauce with minced beef, and some small shops also add braised beef. Of course, braised beef is naturally different from place to place. For beef bait, I recommend Longwei Muslim snack in Longwei Street in the city. This restaurant has been selling from breakfast to midnight snack, and the taste of the old brand has been very stable. In addition, the urban dumpling shop at the intersection of Xingfu Road and Jianshe Road, the halal snacks on Xingguo Road and the Daguangming snacks on Renmin Road in the ancient city are all good choices.
2. Rice Noodles:
There are many different ways to make rice noodles as an ingredient in Yunnan. The famous ones are Mengzi Crossing the Bridge Rice Noodles, Maitreya Braised Chicken Rice Noodles, Dali Shredded Chicken Cold Rice Noodles, Dehong Handmade Rice Noodles, Kunming Tofu Rice Noodles, Yuxi Pot Rice Noodles, and different varieties of braised rice noodles, fried rice noodles, stinky tofu rice noodles and canned rice noodles distributed all over Yunnan. When it comes to Dali characteristics, it must be said that the shredded chicken is cold rice noodles, and the locals call it cold chicken rice noodles. The method of cooling rice noodles is very simple, that is, adding all kinds of seasonings to rice noodles and recording the cold shredded chicken, but it is not simple to do it well, from the quality of rice noodles to the proportion of ingredients to the process of muscle marinating. When it's hot, it tastes sweet, sour and spicy in the mouth, which is extremely delicious. Looking back on Renmin Road, the recommended ancient city, and looking back on this well-known and time-honored store in Dali, there are now three facade operations because of the separation of several brothers, which are on the same road and not far apart. Personally, I prefer the easternmost one, which tastes very good. Besides cold rice noodles, their braised chicken skin is also a special feature.
3. Bait block:
This may be a lot.
