Longyou Hair Cake is a very representative snack in Longyou. Every family will prepare a snack on holidays. Chili sauce seems to be mixed with water, salt, monosodium glutamate and some unknown spices. It's thin, and it dissolves as soon as it is mixed with rice paste, and there is no trace. I saw that the whole bowl of rice paste turned red, and with a little vinegar, it was sour and spicy, and my appetite was wide open.
Tofu meatballs
Its production process is very interesting. I saw the master quickly scooped up a spoonful of tofu mud mixed with minced meat in his right hand, gently crushed it, put it into a bowl filled with Ge Fen in his left hand, and shook it evenly clockwise. When it was covered with a thick layer of Ge Fen, the meatballs formed, plopped down the edge of the bowl and fell into the pot in front of him, waiting for it to float up, and then took out of the pot. Tofu balls served on the table are rippling like white jade in the clear soup decorated with green shallots. The surface is glittering and translucent, just a small one, lining out the fragrance of tofu and revealing the richness of meat fat, which is neither dull nor boring. A meatball fell into the belly, sipping the clear soup in an unfinished way, and the umami was still wrapped around the bottom of the throat, which made people quickly raise the spoon and pick up the next tofu pill. Friends who like heavy taste can also add some peasant Chili sauce and balsamic vinegar.
