Huanghuangmo is a special snack in huangling county, Yan 'an City, Shaanxi Province. Yellow steamed buns are crisp and delicious, full of sesame-sized nests, soaked in a bowl of cooking oil. They are placed like a beautiful boat, leaning like the last quarter moon, smelling fragrant, looking tender and eating sweet. Yellow steamed bun: referred to as yellow steamed bun, named after its yellow color. The main raw material is hard millet flour. Its production procedure is grinding, and then spreading, that is, boiling a proper amount of water in a pot. After the water boils, take out a part of the ground hard paste and stir it into a small pot paste with cold water, pour it into the boiling pot and cook for a few minutes. Then, gradually sprinkle a part of the paste into the pot, stir while sprinkling to make it into thick porridge, cook and stir in the pot for about 40 minutes, then take it out of the pot, cool it slightly and mix it with the rest. Put it into a hot kang or a micro-hot pot for fermentation for about 6 hours. When it smells delicious and tastes slightly sweet, take another pot, dig out a piece of fermented dough, put it in the pot, pour in water, add yeast and water to make a paste, then cover the pot and ferment again at an exothermic place for about 30 minutes. It is wise to spread the batter with foam.
Mutton soup:
There are many delicious things in Yan 'an: potatoes in Ganquan rubbed with tofu and long pancakes, and mutton soup is the most delicious. Mutton, mutton offal and soup cooked with spices are very simple. The villagers squatted together around the towels on their bellies, holding steaming mutton soup in their hands.
